There's no shortage of Mexican restaurants in Delta, so when Felix and Karen Barron decided to open Sol Margaritas, they wanted to set themselves apart from the competition.
They did that with menu, location and a fresh new look.
Felix Barron entered the food industry in a rather unique fashion. He was working with a construction firm in Seattle, Wash., that did a lot of restaurant remodels. He watched, he learned and he decided he could improve upon what he'd seen.
Thirteen years ago, he and his family moved to Delta County, bringing south-of-the-border flavor to several restaurants. In all his ventures, Felix has used his construction skills to remodel the restaurant interiors. With the opening of Sol Margaritas at 350 Stafford Lane, Suite 3512, he was delighted to be dealing with fairly new construction, although the space had been vacant for some time. He and his wife spruced up the interior, developed an extensive menu and started serving delicious Mexican food six days a week.
Lunch is served from 11 a.m. to 3 p.m. and features popular items such as tostadas, chimichangas, burritos, enchiladas and more. Burgers and grilled cheese sandwiches are available for the "gringos." Kids can choose from quesadillas, pizzas, chicken nuggets and much more.
The chicken soup at Sol Margaritas is a favorite among lunch patrons. The original recipe incoporates chicken, pico de gallo, cubes of avocado and a mild sauce.
Folks also like the avocado salad, a vegetarian specialty made with avocados, cucumbers and lime juice.
Meat lovers will enjoy the fajitas and carnitas. Fried pork stars in the authentic Mexican slow-cooked carnitas. The fajitas are served with your choice of steak, shrimp, chicken or a combination.
It would be impossible to list all the combination, seafood and egg plates available at Sol Margaritas. Better order a beer or a margarita to sip as you peruse the menu.
Dinner is served until 9 p.m., and with generous portions you won't go away hungry.
Look for Sol Margaritas on the east side of Stafford Lane just south of Taco Bell. You'll find plenty of parking, which is another factor that sets Sol Margaritas apart.
